Weeknight Pork Loin

School nights. Work in the morning. Need an easy 30 min pro dinner?

I don't know about you, but with two little kids running around I am exhausted by the end of the day. With a baby whining in the background and my 4 year old by my side trying to "help" me cook, it can get a bit wild. Don't get me wrong, Owen is an AMAZING chef, but that's a story for another time. I love to cook! Being in the kitchen is my happy place, but again, when I have a million things going on and a time crunch I don't really want to be spending over an hour on dinner.
Now don't get me wrong. I love a good ol' casserole as much as the next girl. However, a nice little classed up meal once in a while with a glass of wine sure is a nice treat, especially when it can be cooked in 30 minutes. A pork loin cooked correctly can be juicy and tender, add some amazing flavors to it and you have got yourself a gold star weeknight dinner!

This pork tenderloin took no time at all. It is my take on a Racheal Ray recipe. Her recipe says to bake a 4-4 1/2 lb pork loin (I only used one loin and cut the recipe down) at 500 degrees fahrenheit. So you know that sucker will cook quick. One thing that helps cook this hunk of meat so evenly and quickly is you cut slits about an inch apart all the way down the pork loin.
SOME INSTRUCTIONS:
After you have placed your pork loin on a lined cookie sheet. Trust me you want it to be lined. I failed to do that the first time. It took a lot of SOS pads. Pour the balsamic vinegar over the pork loin. Get in there and work the vinegar throughout the pork. Next you are going to get some olive oil. I have found the more you spend on your olive oil the better it will be. You take about 4 tablespoons of olive oil and drizzle it over the pork loin as well. Rub that into the meat just like you did with the vinegar. Here comes the really easy part, using pre minced garlic, it just saves me more time, I take about 4 teaspoons of the garlic and spread it throughout loin. Sprinkle some corse sea salt and fresh ground pepper all over as well as any steak seasoning blend. This is what I use this HERE Finally, I just lay 4-5 thyme sprigs on top and pop him in the oven for 20 minutes. The perfect cooked pork temperature is 145 degrees. Once your meat is done plate it and drizzle with a smidge more balsamic.
Balsamic Pork Tenderloin
Total Time : 30 Min.
Prep Time: 10 Min.
Cook Time: 20 Min.
Servings: 10
4-4 1/2 Lb Pork tenderloin
4 Tablespoons balsamic vinegar
4 Tablespoons olive oil
4 teaspoons minced garlic
steak seasoning, fresh ground pepper, and corse sea salt
4-5 sprigs of fresh thyme
Pre heat oven to 500 degrees F.
Trim all the excess fat off the tenderloin. Once it is trimmed to your liking place on a lined cookie sheet. Cut slits into the tenderloin about an inch apart all the way down it.
Coat the tenderloin when balsamic rub into the meat. Drizzled the tenderloins with olive oil then work it into the meat as well. Spread minced garlic all down the tenderloin. Sprinkle steak seasoning, pepper and corse sea salt all over the meat. Lay the thyme springs on top of the meat and bake for 20 min.
Let the meat rest for about 5-10 minutes before carving and plating.

I paired mine with a homemade simple rice pilaf and sautéed broccoli and red onion with some lemon.
