Simple Salmon Dinner

Everyone needs an easy seafood dish! Here’s mine!


Ahoy!!! Let’s get fishy!


To be honest, I have NEVER been good at cooking fish until the day I threw this recipe together. I don’t know why. I have followed recipes to a “T” and my dishes are still not good. Maybe, it’s because I am super cheap and buy frozen Tilapia. No offense to Tilapia but I am not a fan!!


Wouldn’t you know it, when we went to have a beach town getaway L wanted fish for dinner (he’s kind of a health nut and wants fish a lot more often then I actually cook it). Well, being local we had to see what they had available at the store.


They had some beautiful salmon fillets. I grabbed 4 and decided it was time to figure this out. We were staying in an AirBNB so I wasn’t going to go crazy with ingredients that I needed.


I knew we wanted a lot of veggies (again husband is a bit of a health nut) so I grabbed an easy go-to…. spinach, tomatoes, and of course onions. How can you leave onions out?? I grabbed a good bottle of white wine, olive oil, Italian herb seasoning and lemon. oh, and some cilantro.


Funny thing. I was born in New Mexico. New Mexican food has more of a Navajo flavor than a Mexican flavor. That being said, it took me a very long time to really like cilantro. I wasn’t used to it at all. It’s not a New Mexican food staple like it is a Mexican food staple. Now, I use it in place of parsley a lot of the time.


Anyway, back to the salmon. One thing I have learned about salmon is that you want to cook salmon slowly… and I mean slowly. The way you can tell if you are cooking it too quickly is if there is white coming out of the fish as it is cooking. That white is the fat (the flavor) of the salmon seeping out. Trust me, you don’t want that flavor to run away! Also, if you do a slower cook, you will get a nice little crust on that fish instead of a char.


So enough chit chat lets put this dinner together.



 

Simple Salmon Dinner



2 Salmon fillets

2 teaspoons Italian herbs

2-3 garlic cloves

half a pint of cherry tomatoes

half an onion

2-3 handfuls of spinach

1 Tablespoon olive oil

splash of white wine

1 lemon

Cilantro for garnish

salt and pepper to taste


Heat a pan on low medium temperature. Once your pan is hot add your olive oil. Add your salmon to the pan…skin down. Now that your salmon is starting to slowly cook add your salt, pepper and your Italian herbs.


As your wait for the skin side to finish cooking start, slicing your onion, smashing a garlic clove and halving your tomatoes. At this point, you should be able to see that a good portion of the fish is cooked. It is ready to flip. REMEMBER do NOT cook too fast and let the yummy fish fat cook out!


The skin should have a nice crisp to it. While the second side of your salmon is cooking, put a handful of spinach on each plate and drizzle it with olive oil. By now your salmon should be done. Place your fillet on its bed of spinach. Smash a couple garlic cloves don’t even worry about chopping them and throw them in the pan with a splash more of olive oil. Add the onions and tomatoes. Once the skins on the tomatoes are close to bursting add salt and pepper and your splash of white wine. bring to a simmer till the wine cooks down.


Put your onions and tomatoes on top of your salmon, sprinkle with cilantro, and drizzle with your lemon wedge! Voila!


 

Serve it with some chilled white wine and some nice crusty bread
